The ledger doesn't move until the numbers are proved against the same period in Odoo.
Build
The new system gets built while Odoo keeps running. The side that attracted the custom modules, usually sales, service or projects, becomes real records named the way your floor names them. Both systems run on real data until the same questions get the same answers. Only then does anything get switched off.
Handover
The repository, the database and the hosting are created in your company's name on day one, so the handover is really just us stepping back from accounts you already hold. Documentation, training over video, and a connection to whatever stays in Odoo so nobody retypes anything. An optional support plan covers the system we built. Odoo's upkeep stays with Odoo's people.

Or move the customized part into a system you own and let Odoo keep the standard work. Only the third one is ours to do, and we build the list first because the list decides.
Can our data actually get out?
Yes, and it's the best thing about your position. Odoo runs on PostgreSQL and exposes every model over its external API, so extraction is ordinary engineering work. Nobody has to negotiate about formats. On Odoo Online you get less direct database access, but the API is still there and it's enough.
Do you come onsite in Chicago?
The work runs over video, the same way it does for our clients across the country. An Odoo engagement suits that well, because the audit, the extraction, and the reconciliation all happen on screens anyway. If one particular session would genuinely be better in a room, it goes in the written scope, where it becomes a commitment.
