The ledger moves only once the numbers have been proved against the same period in Odoo, if it moves at all.
Build
The new system gets built while Odoo keeps running, with the sales, service or project side that attracted the custom code rebuilt as records named the way your team names them. Both systems run on real data until they give the same answers to the same questions. We switch nothing off because a build is done. It gets switched off because the numbers matched.
Handover
The database, repository and hosting are in your company's name from day one. Handover means documentation, training over video, and administrator access you can drop without asking anyone. Whatever stays in Odoo is connected to the new system so nobody retypes anything. An optional support plan covers the system we built. Odoo's own upkeep stays with Odoo's people.
